We call our cooking style 'Liberated Nanyang Cooking'. .
'Nanyang' refers to our culinary Heritage which originates from the 'Southern Seas' of China, a region blessed with a tropical climate rich with an incredible diversity of spices, cooking techniques and produce. This diversity forms the basis of the flavours we grew up with.
Our ‘Liberated’ approach is all about feeling the freedom to innovate and evolve Chinese cooking without feeling the need to stick to ‘the way it’s always been done’.
However, ‘authenticity’ matters and for us, it’s about an ‘honesty’ to ensure that the flavours we put in our food reminds us of the flavours we discovered in childhood and to recreate the fond memories of trying something for the first time.
So, in London, we are now doing, what our ancestors did when they settled in the lands within the Nanyang area - we are evolving our cuisine using the skills, techniques and ingredients we can find locally.
Like our ancestors, we feel the same wonderment and curiosity to explore the ingredients the world has to offer.
